Chicken Mince Lasagna


CHICKEN MINCE LASAGNA


INGREDIENTS

FOR THE CHICKEN MINCE
  • Chicken Mince - 500 grams
  • Onion - 1
  • Carrot - 1 small
  • Capsicum/Green Pepper - 1 small
  • Spring Onion - 1 stalk (the green)
  • Tomato Puree - 1 tbsp
  • Chilli Sauce - 1 tsp
  • Salt To Taste
  • Pepper Powder To Taste
  • Oregano - 1 tsp
  • Chilli Flakes - 1 tsp
  • Pasta Seasoning - 1 tsp
  • Worcestershire sauce - 1 tsp
  • Pasta Sauce - Store Bought 1 tbsp
  • Tomato Ketchup - 1 tbsp
  • Olive Oil - 2 tbsp
  • Water - 1 to 2 tbsp


METHOD

  • Wash and clean chicken mince and keep aside. 
  • In a pan, heat 2 tbsp olive oil and add in the chopped onion. Cook till it turns translucent.
  • Add the finely chopped carrots, the spring onions, green pepper or capsicum & salt to the onions. 
  • Cook for 5 minutes.
  • Add in the chicken mince adding 1-2 tbsp of water till the mince is almost done.
  • Add in the pepper powder, tomato puree, chilli sauce, chilli flakes, oregano, pasta sauce, worcestershire sauce & tomato ketchup. Cook till chicken and vegetables are almost done & the liquid has evaporated.
  • You then get a dry meat sauce. Cool & keep aside.


FOR CHEESE SAUCE


INGREDIENTS

  • White flour - 4tbsp
  • Butter - 4tbsp
  • Milk - 1 cup
  • Cream - 1 cup
  • Cheese - 2 cups (Mozzarella, Cheddar & Parmesan or you can use any 1)
  • Salt to taste
  • Pepper to taste



METHOD

  • In a pan heat butter till melted.
  • Add in the white flour and mix till it forms a 'roux'.
  • Add a little milk at intervals, until there are no lumps.
  • Add in the cream and let it simmer on very low heat, till the sauce is glazy & thickens.
  • You can add in a little more milk if you think the sauce is too thick.
  • Add in the cheese to the sauce & season with salt and pepper.
  • Cool & keep aside


FOR THE LASAGNA 

INGREDIENTS

  • 6 lasagna sheets 
  • Water

METHOD

  • Boil water in a big pot & add in the lasagna sheets.
  • Once the water comes to a roar, cook for 2-3 minutes.
  • Drain the sheets & refresh them with ice water.
  • Separate them so that they do not stick to each other.


FOR ASSEMBLING THE LASAGNA

METHOD

  • In a square baking pan, layer the bottom of the pan with the mince meat sauce.
  • Spread the lasagna sheets over the sauce.
  • Pour the white cheese sauce on top and continue layering until you get the cheese sauce as the top layer.
  • Sprinkle to top with cheese, chilli flakes, oregano & crushed pepper.
  • Bake at 200 degreesC for 25-30 minutes.
  • Cut in pieces and serve hot.
