DARK CHOCOLATE COOKIES



As you can probably tell, I love cookies. They are my favourite dessert. I can pass up cakes, pastries and pies for one good cookie... Preferably chocolate chip. The reasons I like cookies.... They take little time to produce a single or double batch. It puts a smile on your face watching people's face's light up when you say "homemade cookies".
I was heading for my regular evening walk on Thursday and I bumped into my daughter’s friend, Freya Arsiwala who asked me “Aunty when are you making the cookies”??
The next day morning I baked my batch of homemade chocolate chip cookies
Whenever I offer someone a cookie their first response is, "Are they homemade?" When I say yes, they get a big smile on their face, grab two (because you need one for each hand) and enjoy the moment. A really good homemade cookie!

INGREDIENTS 

  • 120 grams unsalted butter room temperature
  • 100grams light brown sugar
  • 50 grams white granulated sugar or caster sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 130 grams flour
  • 30 grams cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 225grams white chocolate chips or semi sweet dark chocolate chips



METHOD

Preheat oven to180degrees C and place rack in center of oven. Line two baking sheets with butter paper.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugars until light and fluffy (2-3 minutes). 
 Add the egg and vanilla extract and beat until incorporated.
 First sift together the cocoa powder, flour, baking powder, and salt and then add to the butter and egg mixture.  Mix just until incorporated.  Fold in the chocolate chips.
Pour the batter into rounds about 2 inches (5 cm) apart.
Bake for approximately 10 -12 minutes or until the cookies are still soft in the center but are firm around the edges.  Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing the cookies to a wire rack to cool completely. 
Makes about 24-25 3 round cookies.
